    1 golden delicious apple, chopped
    ¾ cup plus 2 tablespoons dark brown sugar
    ¼ cup pecans, chopped
    ½ teaspoon cinnamon
    1 cup whole grain pastry flour
    1 cup all-purpose flour
    1 teaspoon baking soda
    ½ teaspoon salt
    ¼ cup canola oil
    2 eggs
    1 cup apple sauce
    1 teaspoon vanilla extract
    1 cup low fat buttermilk


Chop the apple into small bits and put in a bowl.
Combine 2 tablespoons brown sugar with pecans and cinnamon and set aside.
Combine flour, baking soda, and salt and set aside.
In the mixer, combine brown sugar, oil, and eggs. While mixing on a low speed, add vanilla, applesauce, and alternate dry ingredients with buttermilk. When the batter is smooth, stop blending and fold in the apples.
Pour batter into the muffin tin and bake at 400 degrees for 20 minutes.
