Number of Servings: 4


    2 tsp Olive Oil
    2 C Sliced Mushrooms
    2 Tbsp chopped shallots
    1 Clove Galric
    1/2 C Chicken Broth-low sodium
    1/4 C Sherry
    16 oz Venison Loin
    1/2 C. Sour Cream
    salt and pepper to taste


Saute' steaks in 1 tsp EVOO; cook to medum rare or your desired taste. Remove from pan and keep warm.
Add remaining 1 tsp EVOO to pan and saute' mushrooms and shallots. Add garlic and cook 1 minute. Add broth and sherry--heat until bubbling. Remove from heat--add sour cream and stir. Add steaks back in and coat with mushrrom sauce. Divide into 4 servings.
