    2 tsp EVOO
    3 Tbsp. Balsamic Vinegard
    2 tsp Dijon Mustard
    1 large garlic clove
    16 oz boneless, skinless chicken breast
    2 C sliced mushrooms
    1/3 C Chicken broth-low sodium
    1/4 Tsp dried thyme, crumbled


1. In nonstick skillet, heat 1 tsp EVOO
2. In a medium bowl, mix 2 Tbsp vinegar, mustard and garlic. Add chicken and turn to coat
3. Transfer chicken and marinade to skillet. Saute chicken until cooked through. About 3 minutes on each side. Transfer chicken to another platter and keep warm.
4. Heat remaining 1 tsp EV"oo in skillet. Saute mushrooms for 1 minute. Add broth, thyme and remaining 1 tbsp of vinegar. Cook, stirring occasionally, until mushrooms are deep brown. About 2 minutes.
Serve chicken topped wth mushrooms.
