    1 Tbsp extra virgin olive oil
    1 Tbsp Fleishmann's butter
    1 onion, diced
    2 cloves garlic, minced
    1 c dry arborio/risotto rice
    2 c. white wine *
    1 c chicken broth *
    1/4 c sun dried tomatoes, chopped
    1 c feta cheese, crumbled
    seasonings (oregano, thyme, salt, pepper)

    * you need 3 c total liquid, can be any combination of wine/broth


1. heat oil and butter in large pan

2. add onion and garlic, cook about 3 minutes

3. add rice, cook 1 min

4. add 1 c wine, simmer until most of the liquid is absorbed

5. add 1 c chicken brother, simmer until most of the liquid is absorbed

6. add seasonings, tomatoes and remained 1 c wine. simmer until mostly absorbed.

7. add feta and cook and stir until cheese is just melting. serve
