    These instructions are very simple and quick. Make sure you use a firm tofu for texture. Assume an entire pear for each salad made, but you can also experiment with different fruit.

    I have also in the past steamed broccoli and added it on top and it actually tastes great as well.


Place warm tortilla shell on bottom of plate
Place two cups of fresh spinach on top of the tortilla.
Cut pear into long skinny slices and arrange atop the spinach
Cut the tofu into cubes and place into frying pan, use only nonstick spray and red wine vinegar to cook over high heat until the texture is what you desire. Add the chickpeas to the tofu mix and cook on stovetop as well.
Sprinkle tofu and chickpeas ontop of Spinach, then add salad dressing and feta cheese.
