Ingredients
-
-Rinse quinoa
-Cook 1 cup of quinoa in 2 cups of vegebetable stock- bring to a boil and simmer for 16 minutes, stirring occasionally.
-steam the asparagus
-cut up and sautee the onions and peppers
-stir in above ingredients
-marinate portobellos in oil, balsamic, basil, and any additional spices for up to 6 hours. then grill in a fry pan in the marinade for about 10 minutes or until cooked through.
-slice cooked mushrooms and serve over the quinoa
