Number of Servings: 8


    2 tbsp olive oil
    2 large onions, finely chopped
    4 cloves of garlic, peeled and crushed
    pinch of chilli flakes
    2 tins of chopped tomatoes (14 oz cans!)
    2 handfuls of basil, roughly chopped
    large pinch of sugar
    4 tbsp low fat plain yogurt


Finely chop the onions and crush the garlic.

Heat oil in a pan and add the onions and garlic. Sweat down until softened.

add the chili flakes and cook for another minute

Pour in both cans of tomatoes, then 3 cans of water.

Season with salt and freshly ground pepper and a large pinch of salt.

Bring to a boil then lower to a simmer and cook for 30 minutes.

When done, add 2 handfuls of roughly chopped basil and 4 tbsp yogurt.

Blend until smooth and serve

This recipe makes about 8 1/2 to 9 cups (cup = 250ml) of soup, so a serving is a little over a cup.
