Ingredients

    1 lb pork tenderloin cut into 1 in pieces
    1 tbs no salt added butter
    1 md onion,rough chopped
    1 md green bell pepper, rough chopped
    6 cloves of garlic, minced
    1 can diced tomatoes(approx. 15 oz)
    1 can chopped green chilies(8 oz can)
    1 can tomato sauce(8 oz can)
    1/2 cup chicken broth
    1/4 tsp salt, black pepper, white pepper
    1/2 tsp cumin, red pepper flakes
    2/3 cup instant brown rice
    2 tbs finly chopped fresh cilantro (opt.)

Directions

In 10 in. skillet melt butter. Add onion garlic and bell pepper; cook 3-4 min stirring occasionally until tender.
Spray slow cooker with non stick spray. In cooker mix pepper mixture and remaining ingredients except rice and cilantro.
Cover and cook on low for 5 to 7 hours.
Stir in rice. Increase temp to High. Cover and cook for 25 to 30 min longer or until rice is tender. Sprinkle with cilantro.
