Shepherd's pie with a Mexican twist. Shepherd's pie with a Mexican twist.
Number of Servings: 8


    1 1/2 lbs lean ground turkey
    1/2 cup onion, chopped
    2 tsp garlic powder
    1/2 c green bell pepper, chopped
    10 oz black beans, drained
    1 cup frozen sweet yellow corn kernels
    1 pkg taco seasoning mix (reduced sodium)
    1 1/2 cup tomato soup
    1 cup mexican style shredded cheese
    1 cup Hungry Jack instant mashed potatoes, prepared


Preheat oven to 350 degrees.

Brown turkey with onion, bell pepper and garlic powder, drain. Mix turkey with beans, corn, taco seasoning mix and tomato soup. Spread into casserole dish. Top with shredded cheese. Spread mashed potatoes to cover entire dish (using a fork will help). Bake, uncovered for 30-35 minutes, or until top starts to brown. Makes 8 servings.
