    For the Stew:
    2 tbsp vegetable oil
    1 tbsp flour
    1 tsp paprika
    1kg stewing beef, diced
    2 cloves garlic, crushed
    1 onion, diced
    2 carrots, sliced
    1 tbsp tomato puree
    1 beef oxo cube
    1/2 pint boiling water
    1/4 pint orange juice
    1 tsp tabasco sauce
    1 tsp dried thyme
    150g button mushrooms

    For the Dumplings:
    100g beef suet
    200g self raising flour
    1 tsp salt
    1/4 pint water


Pre-heat the oven to gas mark 3. Put the diced meat in a freezer bag with the flour and paprika and shake until the meat is coated in the flour. Heat 1tbsp of the oil in a frying pan and brown the meat in batches, do not overfill the pan or the meat will stew, not brown. Once brown place in a large casserole dish.

Once all the meat is browned heat 1 tbsp of in the frying pan and sweat the garlic, onions and carrots for about 10 mins. Stir in the tomato puree, crumble in the oxo cube and pour in the water and orange juice. Bring to the boil.

Put the tabaso and thyme into the stock and pour it over the meat in the casserole dish. Put the mushroom in the casserole dish and stir everything together. Put a lid on the dish and put in the oven for 3 hrs.

Turn the oven up to gas mark 6 and remove the lid from the dish. Mix the suet, flour and salt together in a bowl and add about half of the water and mix to a sticky dough. You may not need all the water or you may need more.

Pull walnut sized balls of dough off and put on top of the stew. Put back in the oven for 20-30 mins until the dumplings are browned.
