I came up with this recipe on a whim using what I already had. It's high in everything b/c I haven't played around with it. If you do a double crust, add another 1,760 total calories. Ingredients

    1 pkg refrigerated pie dough (2 for double crust)
    1 c. black beans, drained & rinsed
    2 boneless, skinless chicken breast, cut into small pieces
    1 pkg burrito seasoning mix
    1/4 c. (+/- ) water
    1 can red enchilada sauce
    1 can (4 oz) green chiles

Directions

Preheat oven to 425 degrees. While oven is warming up, cook chicken in pan (nonstick or sprayed w/Pam) until no longer pink. Add seasoning and coat the chicken. Add just enough water to create a paste. Add rest of ingredients and reduce by 3/4. While the filling is reducing, line pot pie pan with the dough. Pour filling into crust and top with 2nd crust (if using). Put into oven and cook until crust is golden brown, roughly 10 minutes.

Makes roughly 4 - 8 single cup servings
