    1.5 lb yukon gold potatoes, sliced in thin wedges
    2 tbsp coconut oil
    1/2 tbsp dried minced onion
    salt and pepper to taste


heat coconut oil over med. heat until melted and hot.
add potatoes and seasoning, toss to coat.
Cover and cook until tender, stirring occasionally, about 10 minutes.
