My kids love this, and it's so easy to do! This does make a very pretty side dish for bistro style meals, and a very tasty addition to tacos or other Mexican dishes! Number of Servings: 6

Ingredients

    6 cups cooked white rice
    2 limes, juiced
    3 tbs extra virgin olive oil
    1/4 to 1/2 C fresh cilantro, chopped
    1 tsp dried minced garlic
    2 tsp salt

Directions

Cook the rice, steamed and fluffy is best. Add other ingredients and toss then serve. This makes 6 one cup servings.

(To add a Greek twist, subsitute one lemon for the two limes and add 1/4 cup feta, please account for added nutrion details of feta.)
