    1 lb. smallish raw shrimp, peeled and deveined
    1 Tbsp. butter
    1 Tbsp. extra virgin olive oil
    5 garlic cloves, minced
    1 Tbsp. minced green onion
    1 Tbsp. lemon juice
    1/4 tsp. salt
    2 Tbsp. fresh chopped parsley
    1/4 tsp. lemon zest
    dash Tabasco sauce (or to taste)
    2 cups julienned zucchini


Serves 4

Melt butter in a large skillet, over medium heat. Add olive oil, garlic, green onion, lemon juice and salt. Cook, stirring, until bubbly. Add shrimp and cook, stirring constantly until shrimp turn opaque and pink—about three minutes. Stir in parsley, lemon zest and Tabasco. Remove shrimp to a bowl. Add zucchini to skillet and stir-fry until tender—about two minutes.
Top zucchini with shrimp and serve over hot spaghetti noodles. Sprinkle with parmesan cheese, if desired.
