A favorite at my table--even my kids devour this soup. A favorite at my table--even my kids devour this soup.
Number of Servings: 10


    5 strips smoked bacon
    1 med onion
    1 cup carrots chopped
    1 cup celery diced
    1 cup potato diced
    1 can diced tomatoes
    1 small can tomato sauce
    white beans--any variety , any number of types--I like to use 2 for variety. ( I use navy & great northern)
    3 low sodium, low fat bouillon cubes--beef
    1 TBSP white vinegar (above is wrong)
    1TBSP dried thyme
    1 tsp ground oregano
    2 tsp garlic powder
    salt to taste
    2 tsp or to taste black pepper
    1 1/2 cup lowfat milk
    flour to thicken soup


Soak beans over night. Save liquid to add to soup.
brown bacon with onion in soup pot. Add beans, water and liquid from soaking beans. bring to simmer. Add veggies, tomatoes, beef bullion, salt, pepper, seasonings, tomato sauce, vinegar. Let simmer for about 30 minutes.
make a paste/liquid from milk & flour to thicken soup.
