Slimmed down version of Pasta Carbonara. Good with a salad as a side. Slimmed down version of Pasta Carbonara. Good with a salad as a side.
Number of Servings: 4


    1-8 oz package of whole wheat pasta
    1 medium onion, thinly sliced
    non-stick cooking spray
    1 cup cubed cooked ham
    1/2 c. fat-free chicken broth
    1 tblsp butter
    2 egg yolks, beaten
    1/2 c. minced fresh parsley
    1/2 c. grated parmesan cheese


Cook pasta according to directions. Meanwhile, in a large skillet, saute the onion in non-stick spray. Add the ham, broth, and margarine; heat through. Drain pasta; add to ham mixture. Add egg yolks; cook until the eggs are completely set. Sprinkle with parsley and cheese. Toss to coat.
