Introduction

I can't remember where I found this recipe, but 1 serving is 3 tacos! This is the actual recipe as written, but I like to check as I go and adjust the spices. Sometimes I add a little chili powder or a little less jalepenos. Depends on how spicy my mood is. This is really flavorful and very filling. I started making this recipe when I lived by myself, so it's for one serving, but it's very easy to double or triple for more people. Ingredients

    1/4 lb. 99% Fat Free Ground Turkey
    3- Taco Shells
    1 Tbsp. Fat Free shredded cheddar cheese
    1 Tbsp. Daisy Fat Free Sour Cream
    1/4 cup Dark Red Kidney Beans
    1 Tbsp. Canned Diced Jalepeno Peppers
    1/2 cup Shredded Lettuce
    1/4 cup Chopped Onion
    1/2 cup Hunt's Diced Tomatoes
    1 Tbsp. Low Sodium Taco Seasoning Mix
    1 Tbsp. Extra Virgin Olive Oil

Directions

Heat oil in a non-stick skillet over medium heat. Add chopped onion and ground turkey. Cook until browned. Add tomatoes, jalepenos, taco seasoning and undrained kidney beans. Cover pan and simmer 30 minutes, stirring occassionally. Warm the taco shells in over according to package directions. Fill taco shells with meat mixture. Top with shredded lettuce, shredded cheese and sour cream before serving.
