Introduction
I served this with brown rice, but didn't add it to the recipe because people will use different amounts. This is very healthy and very flavorful. I also used the 2 breasts of a rotisserie chicken, but this can also be made with regularm, uncooked chicken breasts. Ingredients

2 - Rotisserie Chicken Breasts
1 cup - Mushrooms
1/2 med - Chopped Red Bell Pepper
1 cup - Chopped Red Onion
1.5 tsp - Ground Ginger
1 tsp - Salt
2 tsp - Pepper
2 tsp - Red Pepper Flakes
3 cloves - Chopped Garlic
1 tbsp - Lemon Juice
4 tbsp - General Tso's Sauce
2 tbsp - Lite Soy Sauce
1 tbsp - Rice Wine Vinegar
8 leaves - Bibb Lettuce
Directions
Sautee mushrooms, onions, red bell pepper, ground ginger, salt, pepper and red pepper flake together until sufficiently cooked through; not too soft.
Add garlic and lemon juice and sautee for another minute.
Add chopped rotisserie chicken breast to the mixture and cook for another minute. (If you are using raw chicken, cook chicken before adding it to the mushroom, onion, pepper mix.)
Add General Tso's sauce, soy sauce and rice wine vinegar and cook for another 5 minutes until everything is heated through thoroughly.
Serve in a bowl with brown rice on the side and let each person make their own lettuce wraps.
Makes 8 lettuce wraps.
