Ingredients

    3 frozen tillapia fillets (about 5 oz each)
    1/2 Tbsp. olive oil
    1 shallot, minced
    1/2 cup white wine
    2 Tbsp. butter
    1 Tbsp. capers
    1 medium red or orange bell pepper, julienned

Directions

* Although this recipe calls for three fillets, it typically provides enough to feed only two adults with a generous portion size.

Preheat oven to 350 degrees.
Place fillets in oven-safe dish coated with thin layer of cooking spray.
Bake fillets for 25 minutes.
Begin the sauce after fish has baked for 20 minutes.
Heat olive oil in saute pan over medium-high heat.
Saute shallots for 1-2 minutes, until slightly translucent.
Add white wine and allow alcohol to cook off and reduce volume to about 1/4 cup (about 3-5 minutes).
Whisk in butter until completely melted.
Reduce heat to medium.
Add capers and bell pepper, saute for 1 minute.
Add fish. Gently tilt pan and spoon sauce over fillets several times.
Serve immediately.
