Ingredients

1/2 cup all natural peanut butter
1/4 cup packed brown sugar
3 egg whites beaten lightly
1/2 teaspoon baking soda dissolved in 1 TBS warm water
1/3cup flour
2/3 cup oat flour
1/2 tsp salt
1 tsp vanilla
1 1/2 cups rolled oats
1/2 cup raisins (not packed)
1/2 cup dates (not packed)
1/2 cup golden raisins (not packed)
cooking spray for pan
Directions
Makes 48 cookies for 24 two cookie servings
Preheat oven to 375 degrees
In a large bowl cream peanut butter and sugar and beat in egg whites, baking soda mixture, flours, salt, and vanilla. Stir in oats and dried fruit until combined well. Drop rounded TBS of mixture two inches apart onto sprayed baking sheets and flatten each cookie with a fork dipped in water. Moisten fingers with water every few cookies as mixture will be dry. If it is too dry to work with add water by the tsp until workable.Bake cookies at 375 degrees for 5-8 minutes. Transfer to racks with spatula and let cool.
