    1 whole chicken, jointed
    2 tbsp olive oil
    3 cloves of garlic
    400g cherry tomatoes
    sprig of rosemary, chopped
    150 ml white wine
    20 black olives, pitted


Preheat the oven to 200 C, Gas 6

Heat the oil in a large frying pan, add the chicken and fry until browned all over.

Fry the garlic, cherry tomatoes and rosemary in the remaining oil before adding the white wine and reducing.

Transfer to an oven proof dish, add the chicken and olives and bake for 40 minutes or until the chicken is cooked through, basting with the juices every 10 minutes.

Serve in large bowls with crusty bread.
