An easy but healthy way to use up leftover turkey. An easy but healthy way to use up leftover turkey.
Number of Servings: 4


    1/4 C. chopped onion
    1 (4 oz) can mushroom stems and pieces drained (save liquid)
    2 C. diagonally sliced celery
    1 (16 oz) can bean sprouts, drained
    3 T. Soy sauce (I use less salt soy sauce - but calculated with regular)
    5 t. cornstarch
    3 T. water
    2 C. cooked cut up turkey


In large skillet cook and stir onion and mushrooms until onion is tender. Add enough water to reserved jushroom liquid to measure 1 1/2 cups liquid, stir into onion-mushroom mixture with celery, bean sprouts, soy sauce, and Equal packets. Reduce heat and simmer uncovered for 15 minutes.

Blend cornstarch and water; stir into vegetable mixture. Cook stirring constantly, until mixture thickens and boils. Boil and stir for one minute. Stir in turkey, heat through.

Serve over chow mein noodles or rice (not figured in calorie count).

Makes 4 servings - about 1 1/2 cups each.
