Number of Servings: 12


    1 cup Whole Wheat Flour
    1.5 teas Baking Powder
    .5 teas Baking Soda
    .5 teas Ground Cinnamon
    2 cups 100% Bran Cereal
    1 cup Skim Milk
    .33 cup firmly packed Brown Sugar
    1 Egg
    .5 cup Applesauce
    1 Banana, mashed


Mix flour, baking powder, baking soda, and cinnamon in large bowl. Mix cereal, milk, and sugar in medium bowl; let set for 5 minutes. Stir in egg, applesauce, and banana. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)

Spoon into muffin pan sprayed with cooking spray, filling each cup 2/3 full.

Bake at 400% for 18 to 20 minutes or until golden brown. Serve warm or freeze and reheat.
