Ingredients

    5 oz baby spinach
    1 cup light ricotta cheese
    1 can cannellini beans, rinsed and drained
    1 tablespoon chopped chives
    1.5 teaspoons lemon zest
    1.25 teaspoons course salt
    Pepper

Directions

Wilt and chop spinach. Puree beans and cheese and add other ingredients. Fold in spinach. Cook at 350 for 30 minutes.
