Introduction

A warming lentil bake for those cold winter nights, and even better for leftovers lunch the next day A warming lentil bake for those cold winter nights, and even better for leftovers lunch the next day
Number of Servings: 6

Ingredients

    3 cups water
    1.5-2 cups dry lentils
    1 tsp salt
    1 tsp pepper
    1 tsp mixed herbs
    2 onions, chopped
    2 cloves garlic, minced
    1 15oz can diced tomatoes
    2 large carrots, chopped
    1 stalk celery, chopped
    1 each green, red and yellow bell peppers, chopped
    1 1/2 cups shredded low fat Cheddar cheese

Directions

In a casserole dish, mix water, lentils, salt, pepper, herbs, onion, garlic and can of diced tomatoes.

Place uncovered in preheated over at 375

After 25-30 minutes, add carrots and celery, return to oven

After another 40 minutes, mix in peppers & return for 10 mins

Sprinkle grated cheese on top and brown under grill
