Ingredients

# *Peppers, sweet, red, fresh, 4 medium (approx 2-3/4" long, 2-1/2"

# Mozzarella Cheese, part skim milk, 4 oz
# Tomato Sauce, 1 cup
# Beans, red kidney, 2 cup (
# Pepper, red or cayenne, 3 tbsp
# Parmesan Cheese, grated, 0.25 cup
# Ground Turkey, 1 unit, yield from 1 lb raw

Directions
Hollow out each pepper and spray with cooking spray. Place under broiler for 3-5 minutes, turning once. In a sautee pan, spray with cooking spray and brown onion and garlic until fragrant. Add turkey and cook until no longer pink. Add kidney beans (rinsed and drained) and tomato sauce. Cover and cook additional 5-8 minutes.
Add oregano, salt, pepper and red pepper flakes to taste. Add parmesan cheese and stir to combine.
Place peppers in a casserole dish, cut side up and stuff with turkey mixture. Top with mozzerella cheese and place back under broiler until melty and slightly browned!
