    Olive Oil, Extra Virgin, 1 tbs
    Onions, raw, .5 cup, chopped
    Garlic, 1 clove, minced
    Curry powder, 1 tbsp (can use less)
    Ginger, ground, 1 tsp
    Sweet potato, 4 cup, cubed and mashed
    Red pepper, sweet (1 med.) (I used roasted red pepper from a jar)
    Chicken stock, home-prepared, 3.5 cup
    Cured Ham, 1 cup diced
    Cauliflower, raw, 1 cup diced/chopped


In a soup pot, heat oil over medium-low heat. Add onions and garlic, cook for few minutes, stirring occasionally. Reduce heat if necessary. Add curry and ginger and cook for another 1 minute. Add roasted red pepper and cauliflower and cook for another 2 minutes. At the same time in a seperate saucepan, heat mashed sweet potatoes and chicken stock, whisk til combined and heated through. Add sweet potato mixture to vegetables. Add diced ham. Cook for 15 minutes or until vegetables are very soft.
Check if you like the consistency of the soup. Add more stock or water if desired and adjust the seasonings (check if salt is needed).
This can be topped with sour cream or yogurt if desired. If you like a smoother consistency soup, puree all ingredients together (except the ham)
