    1 - whole cucumber
    1/2 cup - red onion, chopped
    3 tablespoons - fresh dill weed, chopped
    1 tablespoon - fresh mint, chopped
    1-1/4 cups - nonfat plain yogurt
    1/4 teaspoon - salt
    1/8 teaspoon - black pepper
    1/16 teaspoon - cayenne
    1/4 tablespoon - celery seed


Combine all ingredients and puree with blender. Chill. Garnish with chopped dill or parsley.

Yields 1 quart
Makes 4 servings (serving size: 1 cup)

  • Way too much going on with this recipe. The coolness of the cucumber and the yogurt mixing with a minty dill/onion-tasting subtle heat, results in a confused set of tastebuds. My wife and I both decided however, if a little sour creme or fat-free mayo was added it would be a great salad dressing. - 7/24/10
