I found this recipe online. I modified it of course. My family thinks it's outstanding. I found this recipe online. I modified it of course. My family thinks it's outstanding.
Number of Servings: 12


    1 TBSP Olive oil
    1.5 cups onion, chopped
    3 tsp minced garlic
    1 4oz can chopped green chiles
    3 large chicken breasts cooked and shredded
    2 tsp ground cumin
    1.5 tsp dried oregano, crumbled
    .25 tsp cayenne or crushed red pepper
    5 16oz cans, great northern beans, drained and rinsed
    6 cups vegetable broth
    3 cups of the chicken broth (that the chicken was boiled in)
    2 packages McCormick's white chicken chili seasoning
    1.5 cups frozen corn


1. heat oil in large heavy pot to med/high
2. add onions & saute until translucent, about 10 minutes
3. add garlic, chiles, cooked shredded chicken, cumin, oregano and hot pepper.
4. saute 2 minutes
5. add beans, broth, corn, and packages of seasoning
6. bring to a boil, reduce heat and simmer for 2 hours or so.

Can be served with grated monterey jack cheese and sour cream

Makes about 12 1 cup servings
