Ingredients

    225g plain flour
    1/2 tsp salt
    4 eggs beaten
    300 ml milk
    4 tbsp olive oil (or pan drippings)

Directions

mix dry ingredients. sift. add eggs, whisk. add milk, whisk til smooth. Preheat oven to 450F, put oil in each muffin well. put muffin tray into oven until smoking. take out, add mixture, cook for 18-20 minutes.
