    8oz Chicken breast, skinless, boneless
    1 5"carrot, julienned
    .5 c. green peppers, julienned
    .25 c. red onions, julienned
    .5 zucchini, peeled and julienned
    1-2 green onions, sliced
    .25 c. mushrooms, canned and thinly sliced
    2 cloves garlic, thinly sliced
    1/2 c. orange juice
    .25 tsp ginger
    .5 tsp cornstarch
    2 tbsp soy sauce


This makes 2 servings.

Julian all vegetables and place in bowl. Set aside.
Mix Soy sauce, orange juice, ginger and soy sauce. Set aside.
Cut chicken into cubed.
Cook chicken in large skillet over med-high heat until browned (you may add olive oil to pan. Not included in nutritional value)
Add vegetables, reduce to medium heat and cook until tender stirring frequently.
Add liquid sauce, bring to a boil and stir until sauce thickens.

Serve over rice. (Rice not included in nutritional value)
