Introduction
For those of us who are jealous of the "easy" breakfast alternatives.... For those of us who are jealous of the "easy" breakfast alternatives....Number of Servings: 2
Ingredients

1 whole Joseph's Low Carb Lavash
2 large eggs
1/4 shredded cheddar cheese (approx.)
Tips
Make these as soon as you can after you buy the lavash... the lavash doesn't maintain it's softness very long and you need it soft to be able to "pinch" the edges right.
I steamed mine in the microwave with wet paper towels as a fix but fresh is ideal.
Directions
Scramble the eggs with whatever seasonings you like.
Cut the lavash in half then cut the halves in half until you are left with 4 equal sizes pieces approximately 2x4 inches.
For each piece put a pinch of cheddar cheese and a pinch of the scrambled eggs.
Fold over the lavash over the eggs and cheddar and using a fork squish down the sides to "close" it (think ravioli or pierogies).
Fry it in oil (coconut oil is healthier if you have it on hand!) on medium heat for about 10 seconds each side (don't walk away it cooks REALLY fast!!).
Enjoy!
You can flash freeze these for about an hour then package them in serving sizes for easy breakfast! Just pop them in the toaster oven for, oh, I don't know maybe 15 minutes?

Alternative: egg whites, no cheese, veggies only, any other filling you'd you like.
