Ingredients

1/2 teaspoon fenugreek seeds
1 teaspoon fennel seeds
1 teaspoon cumin seeds
1 tablespoon olive oil
1-2 dry hot red chilies
1 head cauliflower, cut into flowerets
3/4 pound yellow potatoes, peeled and cut into 1/2-inch chunks
3/4 teaspoon turmeric
1-2 teaspoons salt
1/4 teaspoon black pepper
1/2 cup water
1 teaspoon garam masala
Directions
Toast the fenugreek, fennel and cumin; grind with a mortar and pestle.
Heat the oil in a large skillet (with a lid) over medium heat, add the ground spices and hot chilies, and cook 30 seconds.
Add the cauliflower, potatoe, turmeric, salt and pepper; and saute 10 minutes, stirring from time to time.
Add 1/2 cup water, cover, reduce heat to low, and cook until vegetables are tender to your liking, up to 1 hour, adding water if needed.
Before serving, stir in garam masala. If desired, sprinkle with chopped coriander.
