Ingredients

1 cup brown lentils
2-1/2 cups water
1 cup butternut squash, cubed
1 cup diced onion
2 cloves garlic, minced
1/4 can coconut milk
2 tablespoons curry powder
1/2 teaspoon red pepper flakes
1 serrano or jalapeno chili pepper, minced
1 tablespoon chopped fresh cilantro
Directions
Put the lentils, water, butternut, onion, garlic and coconut milk in a saucepan, bring to a boil, cover, reduce heat to low and simmer until tender.
Add remaining ingredients except cilantro and simmer another 5 minutes.
Sprinkle with cilantro.
