    2 egg whites
    1/4 cup honey
    1/2 teaspoon vanilla extract
    1/8 teaspoon salt
    3 tablespoons spelt flour
    3/4 cup unsweetened grated coconut
    1 tablespoon unsalted butter, melted


Preheat oven to 350 degrees.

Line a baking sheet with aluminum foil and lightly oil.

Beat the egg whites, honey, vanilla extract and salt until foamy.

Stir in the spelt flour, then the coconut. Whisk in the butter.

Divide into 6 portions. Drop 2 teaspoons onto prepared baking sheet and spread into a 3-inch disk.

Bake 12 minutes or so, until the edges turn golden.

Transfer to a wire rack to cool.
