Quick and easy, so it's perfect for those nights you get home late from work! It sounds kind of strange, but it really is delicious! Try it with feta cheese instead of the mozzarella for a different spin. Quick and easy, so it's perfect for those nights you get home late from work! It sounds kind of strange, but it really is delicious! Try it with feta cheese instead of the mozzarella for a different spin.

Ingredients

    2 oz. dry whole wheat pasta
    1 cup low-sodium vegetable broth (or chicken broth)
    1 cup frozen mixed vegetables
    1/4 cup shredded part-skim mozzarella cheese
    fresh ground pepper

Directions

Place vegetable broth in a small saucepan and bring to a boil. Let broth boil rapidly until reduced by about 1/2.

Cook pasta according to package directions and drain.

Add the frozen veggies to the reduced broth and bring back to a boil. Cook for 3-5 minutes, until veggies are cooked through.

Add pasta to broth/veggie mixture and season to taste with black pepper. Top with mozzarella cheese. Makes one serving.
