Ingredients

8 bamboo skewers
1 pound boneless, skinless chicken breast halves, cut into 16 strips (each 2" long)
1/2 tsp curry powder
1 tbsp freshly squeezed lime juice
1 tbsp canola oil
1 cucumber, peeled and cut into chunks
1/2 red bell pepper, finely chopped
1/4 red onion, finely chopped
2 tbsp rice vinegar
3 tbsp chopped unsalted peanuts
1 tbsp sugar
1 tbsp chopped fresh cilantro
1/2 cup Amazing Peanut Sauce (another recipe on spark people)
Directions
1. Combine the chicken, curry powder, lime juice, and oil in a bowl. Refrigerate for 2 hours. Combine the cucumber, pepper, onion, vinegar, peanuts, sugar, and cilantro in a bowl. Refrigerate until ready to use.
2. Prepare the grill for medium-hot direct-heat grilling.
3. Remove the chicken from the bowl and thread 2 pieces lengthwise onto each of the 8 skewers. Brush lightly with the remaining marinade mixture. Set the skewers on a grill rack tht has been coated with oil *see note. Grill for 3-4 minutes per side until cooked through. Meanwhile, warm the peanut sauce in a small saucepan over medium heat for 1-2 minutes or until hot. Serve over the skewers.
*Note*: To coat the grill with a thin layer of oil, which will help prevent sticking, crumble a ball of foil, drizzle with a teaspoon of vegetable oil, and rub onto the surface of the grill with a pair of tongs
