Ingredients

    2 cups frozen or fresh blueberries
    1.5 c. boiling water
    1.5 c. vegan sugar
    juice of 1/2 orange
    2 tbsp. cornstarch
    1/4 cup cold water

Directions

Cook blueberries in boiling water, for 5 mins. Add sugar and orange juice and cook for 5 mins. Combine cornstarch and cold water, and add to cooked blueberries. Stir until thickened. Pour into baked pie shell. If covering w/ pie crust, cook crust for less time so it can thicken in crust and won't burn.
