A hearty but easy fake beef and veggie soup with a spicy kick. A hearty but easy fake beef and veggie soup with a spicy kick.
Number of Servings: 8


    Carrots, raw, 3 medium, sliced
    Cauliflower, raw, 1 cup, chopped
    Onions, raw, 1 large, sliced
    Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.), peeled and cubed
    Zucchini, 2 cup, sliced into half-moons
    Morningstar Farms- Meal starter crumbles, 1 bag (12 oz.)
    Rotel Diced Tomatoes and Green Chilies, 1 10oz can
    2 T. garlic, minced
    1 T. salt
    2 T. veggie bouillon powder or paste
    2 T. Kitchen Witch seasoning (or another Cajun seasoning)
    8 cups water


Saute onions and garlic in a large soup pot or dutch oven. Add crumbles and saute until brown. Add water, bouillon, potatoes, and carrots. Turn heat up to bring to a boil and then reduce heat and simmer until potatoes and carrots are almost done. Add zucchini, cauliflower, tomatoes, and spices. Simmer until vegetables are done, and then let it sit on low until you're ready to eat. If you're got the calories for it, I recommend sprinkling this with some grated parmesan cheese.
