Number of Servings: 6


    2 cups of mashed potatoes either freshly made or from leftovers( to hot potatoes I add milk and 1 tbsp butter).
    2 tbsp olive oil
    1 large onion, chopped
    3 cloves garlic minced
    2 tbsp flour
    3 cups chicken broth
    1 tsp salt
    1/2 tsp pepper
    2 cups carrots, chopped
    1 cup celery, chopped
    2 cups cooked chicken breast
    1 1/2 cups frozen peas


Preheat oven to 350 F. In a heavy pot heat oil and saute onions and garlic until onions are translucent. Add flour and stir until bubbly. Add chicken broth gradually and cook until boiling and thickened. Add carrots and celery. Simmer until just tender crisp. Taste broth and if needed add salt and pepper. Add peas and chicken. Stir to mix. Top with mashed potatoes and bake in oven for 30-45 minutes or until bubbly.
