    # Oranges, 1 large (3-1/16" dia)
    # lemon
    # Olive Oil, 1/2 cup
    # Brown Sugar, 175 grams
    # Egg, fresh, 4 large
    # Baking Powder, 2 tsp
    # Almonds ground, 175 grams
    # Confectioner's Sugar, 1/4 cup
    # *Food Lion Berry Mix Frozen Fruit, 1 cup


Base line a 20cm/8in loose bottomed cake tin with non stick baking parchment and lightly oil. Put the orange and lemon in a pan, cover with water, bring to the boil and simmer for 30 minutes until soft. Remove from water and leave to cool. Cut the orange in half and discard pips and put the skin and pulp in a food processor. Cut the lemon in half and discard the pips and pulp. Whizz the skin and the orange to a puree. Set aside. Preheat the oven to 180C/350F/Gas 4. Beat the olive oil, sugar and eggs together until fluffy. Stir in the almonds and baking powder. Add the pureed fruit and stir until thoroughly mixed. Spoon into the tin and bake for 50-60 minutes or until golden and risen. Cool Dust with icing sugar and serve with berries.
