Sweet and tangy, full of greens... Sweet and tangy, full of greens...

    2 TBL Canola Oil
    1 tsp Dark Sesame Oil
    2 Cloves Garlic = 1 TBL, sliced thin
    1 TBL Ginger Root, cut in tiny strips
    1 1/2 cups Green Bell Peppers, cut into bite size strips
    1 cup Broccoli, bite size pieces
    1 1/2 cup bok choy greens only, bite size
    1/2 cup bok choy white stalk, sliced thin
    1 Small bag of Dried Shitake Mushrooms (Soaked in warm water for at least 15 min. then drain)
    1/4 cup Vegetable Broth (more if you prefer)
    1 TBL Teriyaki Sauce (recommend Kikkoman's Teriyaki Spicy Miso)
    1 TBL Tamari (recommend San- J's)
    1 tsp Lime Juice
    1 tsp Granulated sugar


Makes 3 servings

Partially cook your broccoli; I microwaved with few drops of water for 2-3 minutes.

Heat oils in a large deep skillet or wok for 2-3 minutes then begin stir frying garlic, ginger, bell peppers, broccoli, white bok choy (save greens until later), and Shitake mushrooms.

Make sure you keep the skillet pretty hot, but not enough to burn the garlic. Stir, stir , stir. Veggies will sweat, making a little liquid in the pan. Add Bok Choy Greens. The veggies usually take 5-8 min for a cooked crunchy level of doneness.

To the stir fry add sauce ingredients, continue to stir. Cook 2-3 minutes, then serve hot over your choice of rice. An option is to thicken sauce with a mix of cold vegetable broth and 1-2 tsp corn starch. It takes additional minute to cook the corn starch.
