Ingredients

    1 lb ground turkey
    1 medium onion, chopped
    1 packet taco seasoning
    1/2 cup water
    1 can ro-tel tomatoes with green chiles (undrained)
    1 can fat free refried beans
    2/3 cup reduced fat cheddar cheese

    romaine lettuce
    tomatoes
    cilantro
    green onions

Directions

Preheat oven to 350.

Saute ground turkey and onions over medium heat until turkey is lightly browned and onions are tender. Add taco seasoning, water, and ro-tel tomatoes. Bring to a boil, lower heat and simmer until liquid is reduced but mixture is still moist.

Spray 8" square glass cooking dish with vegetable oil spray. Spread beans in layer. Place in oven and cook for 10 minutes. Layer turkey mixture on top of beans. Top with cheese. Bake an additional 10 minutes until cheese is melted.

Serve over a mixture of lettuce greeens, chopped green onions, chopped cilantro, and tomatoes. Optionally, garnish with baked tortilla chips. sour cream, olives, and salsa. (not included in nutritional info)
