    Bell Peppers, 2 pepper, large
    Hillshire Farm Turkey Sausage, 4 oz
    Reduced sodium chicken broth, 0.75 cup
    Plum tomato, 1 large
    Instant Brown Rice, 0.66 cup
    Basil, 0.33 cup
    Shredded Cheddar Cheese, 0.33 cup


Place peppers cut-side down (tops cut off and peppers seeded) in a large, microwave-safe dish filled with 1/2 inch of water, cover and microwave on High until the peppers are tender-crisp, 7-10 minutes. Drain the water and transfer the peppers to a pan to be broiled.

Meanwhile, cook sausage in a pan/pot over medium-high heat, breaking it up into small pieces with a wooden spoon, until cooked through, about 5mins. Stir in broth, tomatoes (chopped) and rice; bring to a simmer. Cover, reduce heat to medium-low and simmer until the rice is softened but still moist, about 10 mins.

Stir basil (chopped) and half the cheese into the rice mixture. Divide the filling between the peppers, then top with the remaining cheese and broil until the cheese is melted, 2 to 3 mins.
