1 tablespoon olive oil
4 small zucchini/courgette 390g
1 eggplant 400g
1 red capsicum 180g
1 green capsicum 150g
5 tomatoes 345g
2 bayleaves

Directions
1. Peel and chop onion and garlic.
2. Put on large saucepan with olive oil.
3. Turn up heat.
4. Chop eggplant, zucchini, tomato and capsicum.
5. Add to onion.
6. Add seasonings
