    2 tbsp fresh sage leaves
    1 tbsp fresh tarragon leaves
    1 clove garlic, peeled
    1/4 medium onion, peeled
    1 tsp olive oil
    1 3-pound boneless leg of lamb


In a large non-stick skillet, thoroughly brown lamb on all sides. Set aside. Blend sage, tarragon, garlic, onion and olive oil in blender until it forms a paste. Spread on the roast until well-coated., Cook at 350 until desired doneness.
