    1 tsp olive oil
    1 small yellow onion, finely chopped
    1 cup brown rice
    2 tbsp golden raisins
    1/3 cup pecans, toasted and coarsely chopped
    2 tbsp finely chopped parsley


In a 2-quart sauce pan, over medium heat, heat the oil. Add onion and cook, stirring frequently, until softened, 2 minutes. Add the rice and stir to coat in the oil. Add the broth (according to the instructions on rice package). Bring to a boil over high heat, cover, reduce the heat to low and cook until all the water is absorbed and rice is tender, about 35 minutes (or according to directions on package). Remove from heat and let sit 5 minutes before fluffing with a fork. Meanwhile, put the raisins in a small bowl and cover with boiling water. Allow them to plump for 10 minutes, then drain. Stir the raisins, pecans and parsley into the cooked rice, Season to taste with salt and pepper.
