    2 pounds chicken breast
    5 1/2 cups shredded cheddar
    7 tortillas, flour
    2/3 cup part skim ricotta
    1 can diced green chilies
    1 bunch green onions slices
    1 can sliced olives
    2 3/4 cups green Chile enchilada sauce


Cut all fat off chicken and dice into cubes. Cook chicken on med heat in a little of the green sauce. When chicken is fully cooked, alternate layers of tortillas, cheese, ricotta, chicken, chilies, and green sauce. Sprinkle top of dish with green onions and olives. Bake at 400 degrees for 20-30 minutes or until bubbly and cheese is melted.
