    Whole Wheat Flour, 2 3/4 cup
    Whey protein powder 1 cup
    Kretschmer Wheat Germ, 1/2 cup
    Old Fashioned Oats, 1 cup
    Baking Soda, 3 tsp
    Baking Powder, 3 tsp
    Cinnamon, ground, 1 tbsp
    Nutmeg, ground, 1 tsp
    Cloves, ground, 1 tsp
    Ginger, ground, 1 tsp
    Salt, 1.5 tsp
    Splenda, 36 tsp
    Granulated Sugar, 3/4 cup
    Maple Syrup, 2 tbsp
    Milk, 3.25%, 3 fl oz
    Apple juice, unsweetened, 2 cups
    Vanilla Extract, 2.5 tsp
    Egg, 3 extra large
    Zucchini, 1 1/2 cup, shredded or pureed
    Kasha, Buckwheat cooked 1.2 cup
    Bulgur, cooked, 1.2 cup
    Cooked grits, white, 1.2 cup
    Banana, fresh, 3/4 cup, mashed
    Applesauce, unsweetened, 3/4 cup
    Prunes, dried, 2 prunes, cooked, pureed


Preheat oven to 425 degrees. Spray three muffin pans with nonstick spray. Mix all dry ingredients. Beat eggs. Add sugar. Add fruit. Stir well. Add remaining wet ingredients. Add cooked grains. Stir well. Spoon into muffin pans. Bake at 425 degrees for 20 minutes or so. Cool. Freeze in sandwich bags for a quick, nutritious breakfast. Makes about 31 muffins.
