Ingredients

    1.5 lb of lean ground turkey
    1/2 cup of cooked lentils
    2/3 cup cooked black beans
    2 eggs
    1/3 cup chopped onion or 1 shallot
    1 cup cooked brown rice
    1/3 cup uncooked quick oats, or 1 piece of toasted whole grain bread, crumbled
    2 oz no fat greek yogurt
    1/3 cup chopped parsley
    2 tsp worcestshire sauce
    2 tsp hot sauce
    2 tsp dijon mustard
    4-6 tbsp no sugar ketchup

Directions

Preheat oven to 350 degrees. Mix all liquid ingredients. Mix turkey with the remaining ingredients. (onion and pepper can be sauteed with garlic in oil 1st, or just added raw).
Add blended egg mixture to the turkey mixture. Mix well.
Transfer mixture to a foil lined baking sheet. With wet hands, form the mixture into a loaf. Brush loaf with ketchup. Bake until center is 160 degrees, approx 1 hr. Makes 12 slices.
